Sous With is a year-long culinary platform hosted at Sienna Calcutta, celebrating India’s most talented sous chefs by giving them the space to bring their creative visions to life.


A collaboration between Elemental, Hapusa, and Sienna, this initiative is designed as a site for cross-cultural encounters and exchanges—bringing the best of the country to Calcutta.
The debut edition features Sous Chef Nikhil Menon from Mumbai’s acclaimed Mizu Izakaya, who will take over the Sienna kitchen on 7th November. Expect a Japanese-Calcutta crossover menu featuring inventive dishes like Kolkata Stew Ramen and Shukto Curry Udon—a true reflection of Mizu’s culinary philosophy that blends local ingredients with traditional Japanese techniques.
